  • Sichuan Cuisine is well known at home and abroad for its characteristics of spicy and tongue-numbing, and one common ingredient of most dishes of Sichuan cuisine is the pepper, peppers and more peppers and plenty of chilies, fagara are added to the dishes, especially the fagara, which has a unique, numbing effect on the tongue, makes your mouth feel tingly and anesthetized. Moreover, seafood is rare in Sichuan; however, freshwater fish, carp and crayfish are available in Sichuan cuisine.
